PORCINI TOMATO SAUCE
- 1 ounce DRIED PORCINI
- 2 cups plum tomatoes, skinned and diced
- 4 tablespoons butter
- 4 tablespoons olive oil
- 1/2 carrot, minced
- 1/2 celery stalk, minced
- 1 heaping tablespoon minced onion
- 1/2 teaspoon dried basil
- Ground black pepper to taste
- Salt to taste
- Soak DRIED PORCINI in hot water 20-30 minutes until soft
- Saute minced vegetables and basil in the butter and olive oil about 3 minutes
- Add tomatoes and simmer on low 15 minutes, uncovered.
- Strain the mushrooms and cut into 1/4 inch strips
- Add mushrooms to tomato mixture and simmer 5 more minutes
- Add salt and pepper to taste
- Serve over pasta
